Did you have a good Easter? Did you celebrate? I have been away at the beach with the family and friends. So our weekend has been full with much goodness. We found a really good Good Friday service here and returned to our beach house to greet friends and make this fantastic Salmon Picnic Pie for dinner. Sonia is an amazing cook and she managed to persuade her mother to part with the family recipe. I have to say it was one of the most delicious pies I have ever had. A great shortcrust pastry filled with salmon, rice, mushrooms, garlic, dill and eggs. The little girls had fun cutting pastry shapes for the decoration – the theme was the Cross.
