I love having fresh produce to use. On the weekend a friend gave us some green gage plums that were ripe and ready for eating. The great thing about these little fruits is that they are bright green, almost lime green in appearance. So I went about creating a torte using some leftover ganache (cream and chocolate), Sr Flour, sugar, melted butter and eggs. I ended up with a thick batter which I spooned into a greased and lined spring form tin. I then layered the top with plum halves and sprinkled them generously with brown sugar and those small fragments of raspberry that you get when you buy a frozen packet. A perfect summer dessert.
