Sweet Delights..

This is a country thing I am sure. Baking. Making sweet goodness.
I have always loved baking and have imparted this love onto all of my children, to the point where we now compete on some days as to who is going to make the dessert or sweet lunchbox treat. But what I have discovered since moving back to the country is the ease of making slices. It does seem rather “old fashioned” and CWA but baking teaches you all of the basic, necessary skills for cooking.

Since discovering my inner domestic goddess and embracing it I have not looked back.

There is usually something sweet and homemade in the house. This week it has been ginger and cinnamon cut out bunnies, lemon slice and chocolate hedgehog. And it is the latter I want to share with you.

Unbaked slices are ridiculously easy and delicious, once you have the “foundation” recipe nailed. The following recipe makes a double quantity – enough to eat now, take some to the school cake stall and freeze a section for unexpected guests.

Basic Slice Base:
2 packets of Milk Arrowroot biscuits crushed
1 can condensed milk
250 grams butter

Melt butter and condensed milk together and add to the biscuits which I crush in the food processor. Firmly press biscuit mixture into a slice tray/ceramic dish or plastic rectangle container lined with al foil. I find the foil makes it easy to un mould, especially if it is longer on 2 sides so you have natural handles.

This base can be flavoured in many ways.

Add 1/2 cup of good cocoa to the melted butter and milk mix with the crumbs. Then make a thick chocolate butter icing to finish the slice. Alternatively add 1 cup of sultanas to the base as well.

The addition of lemon rind and 1/2 cup of desiccated coconut to the base makes this into one of the best lemon slices, when finished with a butter icing laced with loads of lemon juice and sprinkled with shredded coconut.

Finally experiment with some golden syrup added to the base and melt 2 large blocks of chocolate and hazelnut to spread on the top. A small amount of copha or butter with your chocolate will stop it from cracking when you are cutting it up.

Let you imagination go….think dried cranberries, glace ginger, nuts of any shape or size or your favourite chocolate bar or candy (jersey caramels!)

  1. Yeah Gordo, there is this male/female thing going on which make many women cringe….I love her writing and simple irreverence for making good food. Plus I read once that she went to bed reading recipe books like novels…I do that!

Ahhh… just yesterday afternoon I was thinking about making slice and wishing that somewhere there was a basic model that could be adapted to use my spare tangellos (noone in our house likes the taste). I ended up adapting a chocolate and orange slice recipe, but I think maybe it's a bit too subtle – tangellos must be more mild flavoured (compared to oranges) than I'd realised.
